A Happy Easter to all Greeks, and wishing you a nice meal today with eating lamb on the spit from 1pm till 10pm, seafood on the barbecue, and let’s not forget to have the best soup in the world, auyolemoni (egg-lemon/rice), this morning… or maybe … margiritsa?
For those wandering what that consists of:
1 lamb’s liver cut into very small pieces
3 fresh scallions finely chopped
3 tablespoons chopped fresh dill
2 tablespoons butter or margarine
Salt and pepper
3 heads of Romaine lettuce chopped into strips
2 eggs
Juice of 2 lemons
1 beef bouillon cube
Water
1/2 teacup rice
